City of Gold Pasta


CITY OF GOLD PASTA 
RainForest Cafe Restaurant Recipe

Makes 1 huge serving

Pasta:
3 tablespoons butter
1 cup heavy whipping cream
1/3 cup crumbled feta cheese
1/4 cup mozzarella cheese, diced
4 tablespoons grated Parmesan cheese, divided use
1 cup uncooked bowtie pasta
kosher salt, to taste
freshly cracked black pepper, to taste

Garnishes:
1 large Roma tomato, peeled and diced into 3/4 inch pieces
2 tablespoons 1/4 inch sliced green onions

In a medium saucepan, melt butter, add heavy cream and heat well. Add the feta, mozzarella and 2 tablespoons Parmesan, stirring often and heating just until cheese melts.

Prepare pasta according to package directions. Drain pasta and add to cheese mixture; stir to coat well. Salt and pepper to taste. Garnish with tomatoes, green onions and the remaining 2 tablespoons Parmesan cheese.
