Balsamic Tomatoes

BALSAMIC TOMATOES
Pollo Tropical Restaurant Copycat Recipe

Serves 8

2 pounds ripe tomatoes, cut into 1 1/2 inch pieces
6 ounces red onion (about half an onion), sliced into long thin wedges
3 green onion stalks, sliced at a diagonal 3/4 inch long
1/2 cup chopped fresh basil leaves
3/4 cup balsamic vinegar
1/4 cup water
3 tablespoons sugar
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

In a large mixing bowl, place in diced tomatoes, red onions, green onions and basil. In a separate bowl, combine balsamic vinegar, water and sugar, stirring until the sugar has dissolved.  Pour over tomato mixture. Sprinkle salt and black pepper over tomatoes.  Use a spatula or large metal spoon to gently fold mixture together. Store in a glass container, covered or fitted with a lid, in the refrigerator for at least 4 hours.  For best results, allow tomatoes to soak overnight.
