Spiced Sweet Potato Wedges

Golden Krust Caribbean Bakery Recipe

2 pounds sweet potatoes (about 2 large), peeled and cut into wedges
2 tablespoons vegetable oil
1 teaspoon paprika
1/2 teaspoon ground cumin
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper (optional)
salt and pepper
Golden Krust Island flavored Ketchup (can substitute regular ketchup)

Preheat oven to 425 degrees.

Mix the sweet potato wedges and oil together in a large bowl. Add the paprika, cumin, cayenne, 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss to coat the potatoes with the spices.

Arrange the potatoes on a baking sheet in a single layer and bake in the oven on the lowest rack until golden brown on the bottom, 12-15 minutes. Turn the potatoes over with a spatula and cook another 8-12 minutes until cooked through. Place the sweet potato wedges on a serving plate and sprinkle some paprika on top to garnish. Serve with Island flavored Ketchup.
