Ceviche

CEVICHE
Bahama Breeze Recipe

Marinade:
1/2 cup orange juice
1/4 cup lime juice
1/4 cup lemon juice
1/4 cup passion fruit juice
1/2 teaspoon salt
1 tablespoon sugar
1/2 teaspoon cayenne pepper
1 tablespoon grated ginger

Assembly:
1 (12 oz.) grouper, sliced very thin
marinade from above – all
1 tablespoon jalapeno, seeds removed and sliced
2 ounces red onion, sliced
2 ounces red bell pepper, sliced
2 ounces yellow bell pepper, sliced

Combine all ingredients and refrigerate for a minimum of 30 minutes and up to 2 hours.

Suggested Presentations: Plate in a martini or cocktail glass Garnish with radicchio leaf and lime. Place on a 10 inch plate and garnish with tropical chips.
