Caribbean Paella



CARIBBEAN PAELLA
Calypso Restaurant Recipe

Makes 1 serving

4 shrimp (16-20 ct.), peeled, tail on, split and deveined
4 mussels
6 ounces grouper (cut into 4 pieces)
4 ounces chorizo sausage, cooked
4 ounces chicken breast (cut into 2x2 inch pieces)
1/4 pound unsalted butter
2 tablespoons chopped garlic
1 large tomato, diced
2 ounces white wine
1 teaspoon cumin
1 teaspoon sage
1 teaspoon thyme
2 teaspoons salt
1 teaspoon pepper
3 cups cooked yellow rice

In a saute pan over medium high gas heat, add butter, garlic and wine. When hot, add chicken, sausage and grouper. Cook until almost done. Add shrimp, mussels, and tomatoes. Add all spices. Cover and cook until done approximately 3 minutes. Place hot rice in a large bowl. Pour hot mixture over rice and arrange seafood on top.
